🌟Day 285🌟Dinner- synfree chicken stir fry. Butternut squash noodles, stir fry veg- all speed and I added extra mushrooms, mange touts, baby corn on the cob and red onions. I left the chicken to marinate in soy sauce, ginger and chilli for a few hours. After I cooked the chicken I added boiling water to the wok to ‘clean it’ and reclaim some of the flavour for the sauce later. Sprayed the pan with frylite again and then quickly fried a thumb of grated ginger, 3cloves of garlic and a red chilli. Then fired in the veg, cooked the noodles in the microwave, back in with the chicken and sauce and half a chicken stock cube and stir stir stir. Soooo tasty and haven’t done it in AGESSS! 🌟Day 281🌟Dinner- butternut squash ‘chips’ done in my new air fryer! I’ve nothing to compare it against but the results are good so I’m as happy as a pig in...butternut squash chips. I forgot to buy potatoes (and eggs for that matter. Who even am I?! But that’s beside the point) so I was using up what I have and that’s a buttload of butternut squash. 🤷🏻‍♀️ Chip seasoning from Aldi made all the diff! For the chicken goujons, I blitzed 1 slice of Brennan’s Wholemeal bread (half HexB) 25g of Lidl BBQ ‘popchips’ for 5.5 syns, (@froyoandfrylight is the queen of this) 1tbsp cayenne (I like it spicy) 1tbsp parsley, 1tbsp smoked paprika and chilli powder. For the batter I used 1 egg beaten with 80g Philadelphia lightest (110g is HexA) and lazy chilli, garlic and more parsley. Onto a tray sprayed with frylite and into hot oven for 15-20ish mins. 🌟Day 281🌟2nd lunch- carrot and ginger soup. A lovely lady in our group shared this recipe last week and lots of people were raving about how nice it was. I’ve changed it slightly using veg I had in the fridge but it’s so tasty- the ginger makes it lovely and warming in this cold weather and it’s all speed which is a bonus. Ingredients: 🥕Big bunch of carrots 🥕2 onions 🥕3 cloves of garlic 🥕thumb of fresh ginger 🥕1 leek 🥕2 sticks celery 🥕3 stock cubes and 1.5l water Method: 🥣Chop and fry the onions, leek and celery 🥣Chop and add the carrots 🥣Grate the garlic and ginger and add to the pan 🥣Add 3 stock cubes and 1.5l of boiling water and cover 🥣Simmer until veg is softened then blitz. 🥣Add more water if necessary If you try it let me know what you think! ⚖️Weigh Day 42⚖️ *sigh* that was my reaction- a big sigh. 🤷🏻‍♀️ obviously it’s a step in the right direction so I’m not not happy but bloody hell this is slowwww. 2lbs to go now to get back to pre-honeymoon weight and I would give my left arm to get there next week. Let’s face it, that might help! Lots happening in the next 7 days but I’m not going to let all that derail me. Let’s face it, there’s always an occasion or something going on that we can use an excuse for not eating well. HOMEMADE HUMMUS 💛 So smooth, so creamy, and so good for my insides! Why?? Regular hummus you will find is made with an oil like canola or other vegetable oils, which are damaging to the body. I am yet to find an olive oil based hummus/dip/spread that doesn’t cost me an arm and a leg. So in my pursuit of foods that will nourish my body, I thought I’d try my hand at making some hummus myself. ⁣ ⁣ Little did I know... it was INCREDIBLY EASY!! Literally took me 5 minutes, I put all the ingredients into my @thermomixnz and came out so creamy and delicious, the texture was like I’d never tasted before. I then split the mixture in half and added fresh beetroot to it for some variety! This was the perfect condiment to my veggie sticks, and the ideal snack to nibble on, or put with platters! ⁣ ⁣ Whilst I realise not everyone has the luxury of time to make this, I was genuinely shocked at how quick it was to whip up! I’m also aware our body’s can handle a bit of processed foods now and then, so I’ll still happily eat the regular one when I’m out and about, but it’s great to know I have the option!! ZUCCHINI PUMPKIN LOAF🎃✨🍂 aka the best fall snack 🙌🏻 Gluten free + dairy free + low FODMAP 😊 I used my recipe for zucchini bread (on my blog) and swapped half of the zucchini out for purée pumpkin so I did about 1/2 cup of each! Then added 1.5 tsp of pumpkin pie spice!! Also added a tsp of xantham gum which made it a little less crumbly 👌🏻 but totally optional it still works without it don’t worry!! You could also try doing all pumpkin if you want it even more “pumpkiny” 😋😋 Happy fall baking 🍂✨
