Our Rustic Baked Pumpkin Donuts are fragrant with a cinnamon, nutmeg, cloves, allspice and ginger spice blend. The cinnamon sugar adds a delicious crunchy topping. Who is looking forward to all things pumpkin season in the Fall?
Rustic Baked Pumpkin Donuts
Cuisine: Esther Approved Vegan Donuts

Bake Time: 12 minutes
Yields: 6 Pumpkin Donuts

Preheat the oven to 350F. Lightly coat 6 donut cavities with nondairy butter; set aside.
Ingredients • 7 Tablespoons unsweetened almond milk or other nondairy milk • 1/2 tsp apple cider vinegar • 1/2 cup canned pumpkin purée • 1 teaspoon vanilla extract • 1/4 cup organic vegan cane sugar • 1/4 cup unsweetened apple sauce • 1/4 cup light brown sugar, not packed • 2 Tablespoons melted nondairy butter, plus more for lightly coating donut pans and topping • 1/2 teaspoon sea salt • 1-1/2 cups all-purpose flour • 1-1/2 teaspoons baking powder • 1/4 teaspoon baking soda • 1 teaspoon cinnamon • 1/4 teaspoon nutmeg • 1/8 teaspoon ground cloves • 1/8 teaspoon allspice • 1/4 teaspoon ground ginger
1. Combine the almond milk and apple cider vinegar in a small bowl to curdle for 10 minutes. This is vegan buttermilk.
2. Stir the remaining wet ingredients together in a mixing bowl. Combine the vegan buttermilk and dry ingredients into the wet ingredients bowl.
3. Evenly divide the batter among each donut tin.
4. Bake the donuts for 12 minutes. Remove the donuts from the pans while they are warm, about 2 minutes after baking. Spread 1-2 teaspoons nondairy butter on the donut side of each donut that was at the bottom of the pan. Dip each buttered side donut in the cinnamon sugar. Serve
Cinnamon Sugar Topping * 1/4 cup organic vegan cane sugar * 1 teaspoon ground cinnamon * 1-2 teaspoons nondairy butter spread on each warm donut
1. Combine the sugar and cinnamon in a shallow dish.
Baked cinnamon sugar churros
Bring 1 stick of butter, salt and 2 Tbs of sugar to a boil on the stove. Once mixture comes to a boil, add in 1 cup of flour and whisk for a minute on the heat. Take off heat and let cool. Add in 3 eggs, one at a time along with 1 tsp of vanilla. Pipe your churro dough on a lined baking sheet and cook for about 22 minutes or until golden brown at 350°. Once churros are completely cooled, brush both sides with melted butter and coat them with cinnamon sugar.

After the donut disappointment the other day, these little guys make up for it 🙌 The Daily Dozen serves up freshly made donuts at Pike’s Place Market, and you can smell that delicious aroma the moment you walk by the Public Market sign 😍 I’ve been here every time I’ve visited Seattle and while all their donuts are good, the superior donut flavor is cinnamon sugar. These donuts come hot and fresh out of the fryer and then get doused in cinnamon sugar—the texture is unbelievable. Taste is obviously good too 😉 I got a half dozen, which is plenty because while they may be little, they’re super filling. Glanced at these so many times in recipe books but put off making them thinking they were too much of a bother. That was until for some unknown reason I had churros on the brain for a good 2 weeks.
Now there are many recipes out there. Some with egg and most without. Oil vs butter. So the obvious choice was the one with the butter and the eggs. Piped out the choux pastry into the hot oil and these babies were born. @fitfreak_suz
