Stayman & Rome is our first cider from @slyclydeciderworks

Stayman & Rome is a wild fermented cider, made from (I'm assuming) Stayman and Rome apples. It pours slightly hazy and pale yellow, with medium carbonation that dissipates quickly. On the nose it's a little funky and slightly acetic. However, the flavor is clean, bringing fresh apples with more malic acid than acetic. It finishes dry with only a hint of barnyard funk and a good balance of the previously mentioned acids.
This would be a great introduction to wild fermented cider for those unfamiliar. It's got some rustic character but is cleaner and milder than most. Enjoy chilled. This is a very drinkable cider, even at 7.5% and I look forward to trying more Sly Clyde Cider in the future!
makes many excellent ciders, and Casnovia is a worthy addition to their heritage line. Made with bittersweet varietals like Yarlington Mill and Dabinett, and heritage sharps like Spitzenburg and Golden Russet, it showcases the apples without any adjuncts or other flavors to get in the way.
The acidity and tannin are well-balanced and approachable – this would be a good introduction to heritage cider for those who are new to sharp acidity and tannins in cider while offering ample complexity for cider snobs. Though it clocks in at 8.5% ABV, it's very smooth and not boozy.

Pretty much there! All but a few lengths of size critical bits of steel for the frame are recycled including the stainless for the tray. The timber for the summer beam came out of the hedge up by the yard. The screws are originally from an old press now long gone. This marionberry cider from @swiftcider
is bomb!! Loved the sweetness and tartness of it! It’s on the dry side but honestly I couldn’t taste it which is great for someone that likes sweet ones better

As we continue to salute the women of cider, we want to recognize Brooke Glover, co-owner of Swilled Dog Hard Cider in West Virginia and Vice President of the USACM. With a business model of making great cider and giving back to the community, this small, family-owned cidery is making a big impact.

Island Vibes pineapple cider last night. Shout out to @cidertable
for the bottle!
Island Vibes is pale yellow and mostly clear until the lees get stirred up. Medium carbonation dissipates quickly, leaving trailing, tiny bubbles. It smells of a tropical getaway - a projection of wishful thinking? Aromas of pineapple, mango, guava, and a slight yeasty funk greet the nose. A sip brings fresh pineapple, though enough malic acid is present to bring the apples back around. The malic acid trickles off to citrus and the pineapples come back. Sweet pineapple and sharp apples linger and meld together, balancing out for a semi-dry finish with a bit of earthiness from the yeast.
This is very good pineapple cider. It has real pineapple flavor that isn’t overpowering and a balance of sugar and acid that many miss the mark on. We enjoyed it chilled and with pineapple curry.

Pick that cider not only because of these amazing, talented, knowledgeable and skilled women, but because they are making some of the world’s best cider.
First Fruit by Foggy Ridge is a great choice. Though Diane made her last batches of cider in 2017 to focus on her orchards, her contributions to the world of cider cannot be overstated.
This is a fantastic cider and I savored each sip knowing I may never taste it again. With big apple aroma and flavor, each sip was better than the previous. Even with all of the acid this cider packs, it’s incredibly smooth. It finishes semi dry with clean apple flavor. Best poured at cellar temperature.

Chorus Heritage cider, 2017 harvest on the left and Aria, a 90% Goldrush, 10% heirloom sharp blend.
Both are fantastic. Chorus has just enough tannic astringency to make it super balanced, Aria is sharper, with more malic acidity and keeps the mouth watering until the next sip.

Mighty Dry cider.
It pours straw yellow and brilliantly clear, with light carbonation that quickly dissipates. Clean apple aromas, mainly green lead to equally clean apple flavor, crisp malic acidity and hints of apricot. It finished fairly dry, but a hint of natural sweetness rounds out the acid.
Mighty Dry is easy drinking, refreshing and crushable. Like most modern cider, it is best served cold. Thank you for sharing it with us @cidersandsours

I picked up @acecider
's seasonal ginger cider a while back but realized I hadn't posted it yet - so here we are.
It pours pale yellow and slightly hazy with light carbonation. Freshly grated ginger greets the nose and the taste buds. The ginger comes first, with malic acidity in tow. It finishes semi-dry with a bit of spice from the ginger, but with sharp and clean modern cider character, much like Ace Joker (on which this is based). It pairs well with sushi, with both the ginger and acidity helping to clean the palate. Like most modern cider it is best served cold.
It’s another glorious day at the CP 🤩🍏
