Noodles to Heaven. Mala Chicken “Biang Biang” (aka Youpo Chemian) noodles. 麻辣鷄「棒棒」(油潑扯)麵。 One of the eight “Strange Wonders” of Shaanxi Province (陝西八大怪), and somehow tonight I have tamed this beast. Again. A rectangular piece of dough, stretched to its limit, and split in half. Topped with a fiery sesame sauce and various greenery and meats, it is a dish that leaves its diner in awe of the wonders of gluten, and wanting more of its exotic yet spicy taste. Kind of like everyone’s perfect lover — presses all the right buttons, and knows when to ask how your day is while pouring you a draught of whiskey. This dish was one of the first dishes I learned to perfect, while working at a farmers’ market food booth (Or at the Food Lovers’ Urban Market, or at Hawkers Market). Back then, I was just the handsome devil fresh off @masterchefcda pulling the noodles — tonight, I made the noodles myself, and my coworkers definitely enjoyed the exotic texture and flavour. For me, it shows far I have come since then, but yet somehow I feel I have so much more to go (like learning how to pull actual Lanzhou-style lamian 蘭州拉麵). The journey continues, I suppose. Тунец по-сицилийски Стейк тунца, тушенный в белом вине с анчоусами и каперсами. Филе тунца500 г. Помидоры черри300 г. Белое вино сухое250 мл. Анчоусы20 г. Каперсы50 г. Чеснок1 зубчик Тимьян1 веточка Оливковое масло2 ст.л. Соль, перец по вкусу Приготовление 1.Филе тунца промыть и просушить бумажным полотенцем. Посолить и поперчить свежемолотым черным перцем. 2.Обжарить тунец на оливковом масле на сильном огне до румяной корочки, при этом в середине тунец должен остаться розового цвета. 3.Выложить тунец на тарелку, чтобы теперь приготовить соус.  Слить масло со сковородки, одновременно  обжарить помидоры черри, каперсы и анчоусы в маленьком  количестве оливкового масла. 4.Слегка обжарив, добавить белого вина. 5.Обратно положить тунец в сковороду с соусом и потушить пару минут. 6.Нарезать филе тунца ломтиками средней толщины, из расчета – 3 кусочка на человека. 7.На тарелку выложить соус и поверх него кусочки тунца. I get it - it seems a quick fix to switch to a pre-made burger patty than to carry on making them all from premium meat. It's easy to say "Let's drop 50 grams and charge the same". But add all of these up over time and you've lost quality, you're customers have noticed and many of them have left. Put quality first. Charge enough and monitor what goes on in your restaurant. *Locro quiteño* Los locros, son el alma y vida de la cocina quiteña, se lo prepara a partir de un refrito con láminas de papas, cebollas blancas bien cortadas, mantequilla, todo en agua hirviendo (si es cocinada en leña mejor ) una vez se va cocinando, va tomando un color dorado y un aroma a comida hogareña, se mezclan papas más grandes y una vez que está la mezcla completa se baja el fuego, se sirve en un plato sopero y se lo acompaña con tostado, queso rallado, aguacate y un poco de hierba.
