😍 They are gluten free, dairy free, peanut free, soy free, and paleo and I really loved it! These superfood 🥞 are so easy to make (you simply combine the mix with water and cook on a griddle or waffle maker), are high in protein, and made from simple ingredients. I topped mine with their chocolate chips 🍫 and syrup. Who’s coming over for some pancakes⁉️

This buckwheat chicken salad is a 15 minute wonder, and it costs less than £2 per portion! 💰💰 The buckwheat is SUPER filling, and has tons of health benefits.... Ingredients and method below 💕☺️ ~
Buckwheat salad; cook buckwheat for 15-20 mins, chop up veggies and literally just mix everything together!! ✅
•160g buckwheat •200g sweetcorn •4 spring onions •1 red pepper (can use any colour) •Handful fresh coriander (optional) •Half a squeezed lime •Salt and Pepper ~
Chicken; mix the jerk seasoning and olive oil together, flatten chicken breasts and smother in spice mix. Griddle on medium heat until cooked through 🤤
•4 chicken breasts •2 tablespoons jerk seasoning •2 tablespoons extra virgin olive oil ~

Happy Monday! Yes, those two words can go together. (Full disclosure: today is a holiday for me.😉) I'm pumped to start the final week of one of the hardest fitness programs I have completed. It is hard physically and it is hard mentally. It was hard because I pushed myself. I did not allow myself to just go through the motions and check the box. 🙌🏻 For 20 minutes a day I moved at an intense pace combining strength and cardio. I tend to avoid indoor cardio so the fact that I did this was a hurdle in itself. 👊🏻 I added bonus workouts to push myself harder. My core strength needed focus so I did extra work there. 😬
I pushed myself to go harder, to increase the height of my step, to move faster, to actually do the jumps. 😁
I'm not finished yet. I have to push through this week. I may not see a dramatic swing in numbers due to some stuff my body is dealing with. However, the gains in the strength of my body and the strength of my mind are more valuable. Those gains will take me to my next adventure!

Before being gluten free I was never that creative in the kitchen. One of the positives of being diagnosed with coeliac disease two years ago is that is has made me try more recipes and cook more often! .
This is one of my favourite meals I have made so far. .

Vagabond gluten free beer,that I was #gifted
from the guys a few weeks ago. So instead of enjoying them as a drink (which I have the other 5😉) I had the idea of making a gluten free battered fish!! I kept it simple and followed the recipe on the @coeliacuk
page and used Brewdog as my tipple of choice! It turned out very tasty with a lovely crispy enjoyable batter. .
🥔🍟I also made the chunky chips from scratch using the following steps,
Cut potatoes in to chunky style chips, leaving the skin on. .
Place in cold water covering the potato.Bring to the boil and simmer for five minutes. Just enough not to make the potatoes not fluff over. .
Once drained line a tray with potatoes, spray with fry light and season with salt and pepper then cook at 220° (200° fan assisted oven) (for around 25 mins until cooked. .
I really enjoyed this meal and I think making home made beer battered fish will be my new regular meal. The chips tasted fresh, tasty and very filling too. .

A new study has found that a childhood stomach bug may be the cause of celiac disease later in life. The findings could pave the way for a vaccine to protect against the disease.
Celiac disease is an autoimmune condition in which the small intestine becomes inflamed and is unable to properly absorb nutrients. The disease can present at any age, with the symptoms including abdominal pain and bloating, as well as diarrhea.
Symptoms are brought on by consuming gluten, a common plant-based protein found in bread, pasta, cake, cereals, and beer made from barley. At present, there is no treatment for celiac disease and the only way to manage the condition is to exclude all gluten products from the diet.
The cause of celiac disease is currently unknown. Now, a longitudinal study carried out by the Norwegian Institute of Public Health has suggested that enterovirus may precipitate the condition.
Enteroviruses are a group of viruses that typically cause mild infectious illnesses but can result in serious illness if an enterovirus infects the central nervous system. The two most common enteroviruses are echovirus and coxsackievirus, with some viruses causing polio and hand, foot and mouth disease. Infections are common in children under three years of age, but most adults are immune.

Salatada ölçü ne kadar yeşillik yemek isterseniz o kadar. Eldeki malzemelerle hazırlamak mümkün. Tüm yeşillikleri bol suda yıkayıp temizledikten sonra derin bir kaba koyuyoruz. Kırmızı biberleri doğrayıp ekliyoruz. Üzerine bir gece önceden kefirli suda bekletilip haşlanmış börülce ve sosladığım pancarı ekleyip iyice karıştırıyoruz. Ben tüm salatalarda zeytinyağı ve nar ekşisini çok seviyorum. Sosu size kalmış ister limonla, ister sirkeyle... Şimdiden afiyet olsun. Bu salata Pazartesi sendromuna da iyi gelir ama yine de siz bilirsiniz tabi 😊😉

Si la chocotorta fue un éxito, esta torta salada me ha dejado con ganas de otra, y otra y puede que un par más! 😎
I N G R E D I E N T E S
🔸2 claras de huevo
🔸35 grs de harina de trigo sarraceno SG
🔸1/2 TSP de levadura química
Ajo en polvo, sal, pimienta y orégano
P A S O S
-Bate las 3 claras (2 + 1) hasta que cojan un color blanquecino
-Añade la yema y bate de nuevo
-Añade la harina y la levadura tamizadas
-Añade las especias al gusto (puedes usar otras a tu elección)
-Calienta la sartén (fuego medio, 4-6) con unas gotas de aceite que una vez caliente, esparciremos por la sartén con ayuda de una servilleta
-Vierte la mitad de la masa y tápala hasta que salgan burbujas en la cara superior
-Añade tu relleno (en mi caso, pavo y queso)
-Vierte el resto de la masa, baja el fuego y deja que cuaje
-Una vez que ha cuajado, le damos la vuelta y subimos el fuego para que se dore
-Disfruta de tu torta salada!

So I took a bite of this gluten-free chocolate orange cake before I remembered to take a photo! (Ooops ☺) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Sweetened with coconut sugar (as it's far less processed) and lots of organic dark chocolate to make it dense and gooey, it is the perfect dessert cake for a party. Add an orange chocolate icing if you want it to be truly spectacular, or drizzle with an orange sugar syrup while it's hot (as I've done with this one), or simply serve it naked - it's perfect all on it's own 😉
Oh, and did I mention that I made this with a a food processor? The simplest cake ever!
M&M caramel chocolate brownie recipe 👏🏼 Thank you guys for all the love on these brownies...as promised here is the recipe to the best gluten free brownie you will ever have 😉 These brownies are rich, gooey and very chocolatey 😍 Be careful they are very addictive and probably won’t last long🤣
1 cup of cocoa (85g)
2 cups of sugar (430g)
1 tsp of vanilla essence
3/4 cup of plain flour (90g approx + I use the GF brand @orgran_healthandnutrition
1 tsp baking powder
250g milk chocolate chips/melts
130g of Caramel m&ms (approx 1 big pack) GF in AUS
Preheat your oven to 160 degrees and line your chosen baking tin with baking paper. Melt your butter and gently stir in your cocoa. Once that has cooled slightly, begin to beat in your eggs. Now stir in your sugar and vanilla. Sift together your flour and baking powder, then add to your mixture. Once everything is mixed add your milk chocolate chips/melts. Pour your brownie batter into your lined tin and even out the top with a spatula. Now sprinkle on your m&ms (you can also add them into the mixture before you pour it in the baking tin - up to you)
Bake for 45-50 minutes in a preheated oven (I tend to take mine out after 45 minutes because I like them gooey) Now leave in the tin for 20 minutes (trust me this is vital, as your brownie needs to “set” if you take it out to early it will break) then turn out onto a wire rack and enjoy hot or cold.
Note - the caramel m&ms are gluten free in Australia. Always check the packaging of m&ms based on your country ❤️
