🍝Creamy Tomato Pasta (dairy free) 🍝
I’ve been looking for different ways to use the cherry tomato farm I seem to have created in my back garden and decided to try a creamier sauce with my latest stock. This is perfect for anyone avoiding dairy or simply wanting to add a few extra nutrients! Sebbie ate loads of this last week but may finally be be suffering with tomato overdose, as he took a couple of bites and said ‘no thank you’. I was just impressed that he came out with that little phrase 😂
🍅Roast a tray of tomatoes with a few cloves of garlic, splash of balsamic vinegar, olive oil and a few sprigs of rosemary (remove these after cooking)
🍅Whiz up the roasted toms with a couple of tablespoons of nutritional yeast and a handful of cashew nuts
🍅Stir through cooked pasta and throw in some spinach.
The calories for these different nut types are pretty surprising🙊That being said, calories are DEFINITELY not the enemy. Nuts are FULL OF nutritional benefits and fiber!! The important thing to remember here is PORTION control, especially with cashews I know people who snack on them throughout the entire day... that adds up fast... so just remember to keep an eye out! Especially if you’re someone who can’t figure out why you’re eating healthy and can’t lose weight... snacks definitely add up VERY fast 💨 ⠀

Yesterday as I was eating this insane non-cheesecake made with cashews and dairy-free coconut ice cream on the side, a guy came into the restaurant, asked if everything was vegan, looked scared, shocked and disappointed when told yes, and walked out! Give it a chance! Don’t be scared! Plant-based eating is compassionate to your mind, body and spirit, animals, and our environment. Just working in one meal a day or even a week will show you eating this way does not mean suffering! (Though admittedly I’m traveling and the bread, coffee, and sugar content has increased as you can see in my IG feed ... so I will be experimenting while creating my new 30-day cleanse program starting this week!) It will include dessert 🍨 ☺️in moderation! I’ll keep you posted and if you need a body-mind reboot, feel free to reach out!
