❤ To my surprise, these soups are being relished by my lil one as well, although I'm not sure how long this is gonna last😷 ( She doesn't know yet what all veggies are going in there 🤓) Yesterday's Lunch was this vegan yet creamy 'Roasted Pumpkin Carrot Soup', topped with some sesame seeds and fresh coriander leaves. • Heat oil in a deep pan, add some cumin seeds, a bay leaf and a cinnamon stick. Tip in about a tbsp of finely chopped Garlic and a large sliced Onion. Saute until the onion slices turn golden brown. • Add in 2 cups of diced Pumpkin, 1 Cup of diced Carrots, some dried basil leaves and saute for about 3-4 minutes.
• Add in the spices ( salt, black pepper powder and turmeric powder) and again saute the veggies. When the pumpkin starts getting tender, add about 1.5 glass of water and let it cook on a medium low flame for about 15-20 minutes. • Once the veggies are soft and perfectly cooked, turn off the flame and let the soup cool down a bit. Blend everything except the bay leaf and cinnamon stick, using a hand blender or in a mixer. Bring the pureed contents to boil and serve the soup with the toppings of your choice. • Enjoy the hot creamy soup with some bread sticks or bread slices 😊

2 T. coconut oil (could also use olive oil)
1⁄2 yellow onion, diced
3 inches fresh turmeric, peeled and chopped
1⁄2 cup organic coconut milk (optional)
Salt and pepper to taste
3 1⁄2 cups carrots, peeled and diced
5 inches fresh ginger*, peeled and chopped
3 cups organic vegetable stock
3 T. hemp seeds
* If you like additional ginger flavor, feel free to increase ginger by 2-3 inches
• Heat coconut oil over medium high heat in a medium stock pot. Add the carrots, onion, ginger, and turmeric and sauté, stirring occasionally until onions are slightly translucent.
• After about 7 minutes of sautéing, add vegetable broth and simmer until carrots are fork tender (another 7-10 minutes).
• Carefully add mixture to blender (or use immersion blender). Add coconut milk and hemp seeds and puree until smooth. Carefully add soup back to soup pot and keep warm, taste and adjust seasoning as desired.

제가 맘대로 독창한거니까
1.당근반개를 채칼로 채쳐주고
2.달군팬에 올리브유를 살짝둘러 1.을 볶아주다가
를 부어 보그르르 하면 #콩고물가루
를 크게 두스푼 넣고 불줄여서 뭉근하게
4.간을 하지 않아도 맛있지만 좀 더 맛있게 하고싶으면 연두 아주 찔끔 추가해 보세요!
5.위에 치즈를 살짝 올리고 전자렌지 30초 정도 데워주면 끝!
상황에따라 통밀스틱 등 올려 탄수화물도 챙겨주기:)

Being sick. It’s a bummer. Luckily, there’s things God put on this earth to help us fight sickness and build our immune system back up. Our Thymus Gland has a big job of keeping our immune system in tip top shape! If we neglect it (don’t feed it) it weakens. Duh. So how do we feed it? Some Nutrients found to increase the Thymus Gland function are... Vitamin A & Beta-Carotene. AKA Carrots!! Best bowl of creamy carrot 🥕 and roasted garlic soup for the WIN. It’s been pouring over here so snuggling inside with bowls of this has been 👌🏼(Tip: I added in rice for Roey so it was easier to pick up and self feed). It’s such an easy and a frugal one too. If you thicken it up with less water it’s a great pasta sauce as well - so versatile. I really throw stuff in, blend and add more stuff to taste 😉 but, the basic recipe for this one was:
. 🥕1 lbs carrots, chopped and steamed
🥕1 cups cashew creme
🥕1T cumin 🥕1-2 cloves roasted garlic 🥕1 cup carrot steam water/stock (add as needed)
🥕Salt + pepper
🥕A good shake coconut aminos 🌪 Basically just blend everything together starting with less liquid and adding more liquid as needed, taste, add more seasoning, then reheat in a pan when it’s smooth and toast some seeds to top! 🥄👌🏼
