She's eating: 🔲 Shrimp and chickpea curry over cilantro cauliflower rice with a side of lemon pepper zucchini.
🔳 Sriracha roasted chicken and peppers with Sriracha lime brown rice and steamed green beans. All topped with mouthwatering ginger scallion sauce.

Let’s talk con-tact paper.... much like wallpaper it can add some beauty to your life, create an easy to clean surface and protect your cabinets. However, it’s a real pain to do. Takes precision and multiple re-do’s and for that very reason it took me over a year to complete the task 😂 I remember when I was younger, living in apartments, I would put contact paper in my cabinets for sanitary reasons and to make the kitchen more my own. After all, it’s easy to peel up when you move and isn’t as hard as re-painting the walls. 🤷🏻♀️ from the poll in my stories, it appears most are of the same opinion. It’s a love hate relationship. I’m sure most think it’s of value, but I’m also sure we can agree on it being a total pain 😂
I’m trying my best to do things I don’t want to do, but that need to be done. You know, those things you start doing and then stop, because it was too hard or was taking too long. Smashed avocado toast! Ingredients:
* 1 ripe avocado
* Red chili flake
* Salt to taste
* Cracked black pepper to taste
* 1 slice of whole grain toast (or your favorite type of bread)
* 1 egg
1. Cut open avocado and scoop it out into a bowl. Season with salt, pepper, and red chili flake to your taste (if you like it spicy like I do, add more chili flake or cut up a jalapeño and add it in!)
2. Fry up an egg (over-easy) and season with salt and pepper to your taste.
3. Toast the bread.
4. Assemble: top the toast with the smashed avocado and then add the cooked over easy egg. And Enjoy!!

The kouign amann is one of the most underrated "pastry cousins” of the well-loved croissant. Making this traditional French pastry is like getting the pronunciation of its name right for the first time (say “queen-a-mahn”) - it's equally difficult. The process of making the kouign amann is very complex and it takes time, skills and lots of patience. Handmade from scratch, this flaky creation is richly flavoured with French butter and coated with caramelized sugar on the outside - an all-time favourite for many pastry lovers! #fromourhandstoyours
Double Chocolate Cheesecake Bars
* 1 package sweet Loren’s gluten free fudgy brownie cookie dough
* 1 package glutino oreo cookies
* 2 (8oz) packages cream cheese
* ½ cup of sugar
* 2 eggs
* ½ teaspoon vanilla
* caramel topping
1. Preheat oven to 325 °
2. Press cookie dough into the bottom of an 8x8 pan, then top with a layer of oreos (I had to break a few in half to cover all of it)
3. In a bowl, use a mixer to beat softened cream cheese until smooth, then beat in the sugar, eggs, vanilla and a pinch of salt.
4. Pour mixture over oreo layer in pan
5. Crush up remaining oreos and sprinkle on top of cheesecake
6. Bake for 35-40 minutes
7. Refrigerate for at least 3 hours before serving
8. Top with caramel drizzle and enjoy!
I've had a super busy week at work and have had a head cold since the beginning of it. 🤒🤧 I was excited for the weekend to sit and relax and get better. But that got boring fast!

Gnocchi with leftover sneaky bolognese - aka half veg half turkey. Recipe for the bolognese is a few posts back (look for the pasta bowl) and I can honestly say it's gotten the stamp of approval time and time again at our house 👌🏻🤤
Served it here with some pan-fried gnocchi, which is so much tastier than simply boiled, and added some extra greens on top and a very generous sprinkling of nutritional yeast - though some parmesan would be just as good!
