i’ve had some requests to make homemade granola so today i played around with it and to my surprise it was SO easy and the best part is you can put in whatever you want!! it’s hard to find a granola in stores that’s low in sugar, has everything you like in it, and is fairly priced. recipe is below hope you enjoy! feel free to substitute or add seeds, fruits or nuts you like!! 2 cups GF rolled oats
2 table spoons of melted coconut oil
1 table spoon of honey
handful of almonds both whole and slivered
handful of flax seeds, hemp seeds, sunflower seeds and chia seeds
1 teaspoon of almond extract (can use vanilla too)
handful of coconut shavings for topping ~mix all ingredients in a big bowl until combined and sticky (can add more honey to get desired texture) then place mixture on parchment paper and put in the oven at 350 degrees for 12-15 minutes! make sure to keep an eye on it because it can burn easily!

Ok so... I recieved some of the results of the blood exams I took earlier today (not the Borrelia/Lyme disease + TBE ones yet) 💉 So it turns out I have really low serum TSH levels... Which is often connected to #hyperthyroidism
. However, I'm getting kind of worried because of this intense headache I've experienced lately, and when googling around I've been reading about ppl with similar symptoms and low TSH who have had hypofys tumours😐 I've had headaches since March at least, but back and forth. Now it's escalating! My head feels like it's about to explode, I'm getting sensitive to light and sound, my body feels like before the flu breaks out, pain in muscles and lower back, numb legs, low fever, dizziness and dimsighted... 😳 -
I'm trying not to worry too much before it's all sorted out. I just feel like this whole year has been about STRUGGLING and feeling ill, tired, drained. I have just recently started to get my energy back, and now THIS! 😓 -
