Time to catch up on my offal/organmeat. I have been nibbling on lambs liver pate over the last few days but needed a hit of offal. Anyone else get like that? 😁 Because it was below 70 degrees today and I could FINALLY wear fall apparel. Hashtag Currently 55 ❄️ AND because I had a follow up appointment with my Rheumatologist today 🤗 I can honestly say this was a very good appointment. Other than needing to track my blood pressure and have my back looked at, this was the best appointment yet and I am just genuinely happy. REWIND to a year ago when I was terrified with no idea what was going on with my body and not understanding what an autoimmune disease is. For a long time nobody understood what was going on with my body. I am so thankful for my Rheumatologist but what has helped me more than anything is the willingness to do what I needed to do to become knowledgeable and take action. I wish I would have taken action when I didn’t know what my disease was. You don’t have to know what you’re dealing with to give your body what it desperately needs. The moment I heard “autoimmune” I should have taken off and ran with it. I wish I didn’t wait so long! But I’ve said it before; it humbled me. It brought me to a place where I felt as though I had no control to say the least. It opened my eyes and it has taught me so much 🧡♥️💜🧡♥️💜🧡♥️💜🧡♥️💜 And I’ve gotten to speak with some pretty amazing and extremely strong people. Some of you might feel like you’re battling something bigger than yourselves, but I believe we all share a God that is bigger than that problem you have and loves you dearly. One of my favourite one-pan fry-ups: Green part of spring onion, chopped Garlic-infused olive oil Ginger grated Kale stalks chopped Chicken thigh chopped Orange carrot sliced Purple carrot sliced Green beans chopped Bok choy stems chopped Cinnamon, salt Sauté onion stem and kale stalks in the oil until caramelising. So...the coconut flour naan from @myheartbeets was so good and chewy! I began thinking of how much they reminded me of crepes & I decided I should make dessert. I peeled and sliced a large granny smith apple, topped it with 1/2 tsp of coconut oil, a 1/2 tsp of cinnamon, a dash of salt, 1 tsp of honey. I placed it in the microwave for about four minutes till tender. I rolled the warm naan around the apple mixture and drizzled the finished product with the extra sauce left in the bottom of the bowl (after I removed the apples)! Wallah! Sometimes it’s not answers we want, it’s the ability to DO something about it. When we go to the doctor, it’s not the diagnosis we’re looking forward to, it’s the ability to take action based on what diagnosis the results point to. When you think of your symptoms, diagnosis, condition, visits to the doctor’s office, and everything else that comes with chronic illness, try to focus on all the things you can do about it instead of all the things being done to you. A few examples: That list of things you’re not supposed to eat because they make your symptoms worse. This list represents the CHOICES you have. You get to choose how you want food to make you feel. This list empowers you to take control of that choice and say YES to the foods that fuel your body with energy or YES to the foods that taste good and bring you comfort (even if that means paying for it the next day). Getting a new diagnosis on top of the ones you already have. Now that you have new information, you can see why certain things are making you feel worse instead of better. Now you can take action to relieve your symptoms. Spending all day at the doctor’s office or in bed. This is time spent on HEALING. This is not time spent away from the things you “should” be doing, like cleaning the house, going out with friends, etc. This is time spent moving forward with your health and well being. In other words, focus on the actions you can take to improve your health and increase your energy. So...I had to leave work today because I was so dizzy I couldn’t stand without almost fainting. Apparently I’m not eating enough and not getting enough sodium in my diet. 80 Day Obsession is very tough and I can totally rock them....but I’m not eating enough to support them. By eating super clean I’m not getting enough calories and nutrients. I’m upping my caloric intake by 600 calories and I’m gonna be toting around Gatorades for a bit. I’m also taking a few days off of workouts to recover. Fret not! I will be back at it! My October Challenge might turn into my November Challenge but who cares?! Trying to extra coddle my stomach the next few days as I’m getting over these antibiotics with ALL the ginger, collagen, and bone broth I can fit in my tummy. • • If you know anything about me, antibiotics are a VERY last resort for me after every homeopathic treatment has been exhausted. But after 2 weeks of a sinus infection turned bronchitis, something had to be done and I took the leap 😪 Yes, it really messed up my stomach and gave me pretty awful cramps for a few days, but I’m thankful for my knowledge and background in healing my gut, and I know that I can get it back to where it was before. 🍁 ABS & LIVER HEALTH 🍁 - An overloaded fatty liver = belly fat. - Toxins build up in our liver from a toxic lifestyle (unfiltered water, conventional produce, chemical cleaners, toxic makeup products, etc.). To protect the liver as a result, the body traps fat soluble toxins in fat cells and stores them. - One study found that visceral (abdominal belly) fat was “strongly correlated” with a fatty liver. - Research is showing that dysbiosis (more bad bacteria than good bacteria) is the primary cause of non-alcohol fatty liver. Our diet is what influences our microbiome. - 🍁 HIGH FAT DIETS: High fat diets (specifically those high in omega-6) have the potential to cause fatty liver disease through alteration of the of the microbiome and, as a result, an impaired choline metabolism. Those on a high fat diet may need to supplement with Lactobacillus and Bifidobacterium probiotics to prevent NAFLD. Additionally, omega-3 fatty acids are also important to include when eating high fat. So here’s the thing. It’s great having a clean, nutrient dense diet but I personally believe you need to get your environment right first. We kinda need to flip things around! in this day and age a lot of the issues are stemming from the human body being in a state of low grade chronic stress all the time. How do you destress - where is your happy place? For me it’s moving my body and walking. I’m a really good walker ! Hands up if you 💗 walking too 🙋🏼 !! I find something so simple as going for a walk can do wonders for my mind, body and spirit. Put your science 🧠 on: Literally being connected to the ground transfers electrons reennergising me ... after all we are electricity! ⚡️⚡️⚡️Walking is free, super easy, you can run errands at the same time and you can walk with friends and have a good old chat along the way - double points for making connections as this is good for the spirit! So what’s the deal with farmed salmon? Is it really that important to buy wild? Yessssss. Salmon farms are DISASTROUS for the environment, wild salmon species & our health. Don’t buy farmed & don’t eat it. Here’s why… . . Farmed fish are raised in net pens out in the ocean & have been shown to collect diseases and parasites which they then spread to wild fish & us (bad.) To counteract this, farmed salmon are often fed antibiotics (double bad.) . When farmed fish escape from their nets, they compete with wild salmon for food & spawning grounds. Because farmed salmon are commonly genetically modified, they’re these beefy, aggressive mega-fish that often decimate local salmon stocks in the fight for resources. . Then when these genetically modified fish breed with local species it further threatens the future of wild salmon. . The U.S. claims that GMOs (Genetically Modified Organisms) are no big deal, but other countries have produced studies linking GMOs to things like food allergies & autoimmune disease. We avoid them for health reasons as well as ecological ones. . Lastly: most farm raised salmon has artificial food coloring added to its food to give it the healthy pink color it wouldn’t normally have. I have personally seen the color charts that the industry uses. So if you wouldn’t eat red food coloring in your food, don’t eat it in your fish. . . Wild salmon, on the other hand, is awesome. I’ve been a bit MIA lately. About a month ago, I got married 👰🏻🤵🏼(wooo!) and ever since then, I’ve been busy traveling and/or working every weekend (weddings are expensive 😪💸💸) I feel like I’ve been slacking somewhat on what’s most important: taking care of myself. And boy do I feel it!! 😔😴It’s posts like this that remind me it’s okay to take time for myself. It’s okay to say “no” because I’m exhausted. And it’s okay to make myself and my health a priority. It does not mean I’m selfish. It means I can do my other jobs (wife/dog mom/counselor/homemaker etc.) better because I am well and fully engaged. Stop dancing around the edges of who you are. ⠀ ⠀ I did just that this weekend. I was out with some friends and kept choking on my words when asked, "What do you do for work?" I didn't want to explain myself. I was judging myself before they even had the chance to understand what I do for a living. ⠀ ⠀ Why do I still do this? ⠀ ⠀ My ego loves to come out sometimes and make me feel insecure and nervous about owning my truth. I'm just like you. I still have days full of insecurity and questioning what I'm doing. Some days I love to go live on facebook and be vulnerable AF, while other days I'd rather hide. I'm working on it. It's part of uncovering all the misalignment and false stories I picked up in childhood. ⠀ ⠀ The key point is that it doesn't make me flawed or any less worthy as a human. It's an opportunity for me to acknowledge how far I've come on this journey doing a job I never thought I would be able to embody in my wildest dreams. It's a blessing that I'm able to laugh and say, "Wow! Why didn't you just tell them what you do?!" ⠀ ⠀ This weekend I was able to stop & realize how badass it is that I've made it this far instead of getting down on myself. From this point I can only grow.⠀ ⠀ So start embodying your full truth and authenticity no matter who is around.⠀ ⠀ Be completely goofy, amazing and exuberant when talking about the things you're passionate about. ⠀ ⠀ Shout from the rooftops who you are... and then own it.⠀ ⠀ The time is now.

You guys, go make @stephanie.a.meyer ‘s plantain tortillas as soon as possible because they are soo delicious and sooooo easy to make! . . I can’t believe it took me so long to make these (years?!) but I can see these being a staple in my kitchen. I love that they are super soft and pliable and feel way easier to digest in comparison to the cassava tortillas I make. The recipe makes about a dozen tortillas, I froze most of them so that I can pull them out as needed. . . Have you guys discovered any new recipes lately that you’re super into?? Cranberry Turkey Bites 👅👅 These are so delicious and so easy to make! You can batch cook them and have them ready to go throughout the week! Good for sides of a main or snacks mid day👌🏼 . RECIPE BELOW // Hidden Veggie Meatloaf! If you have a food processor, this recipe could not be any simpler. Just use the machine to shred the vegetables, then mince the garlic, herbs, and onions in a second batch. If you are really looking to up the nutrient density, add some grated liver to the mixture. A great way to hide some veggies and organ meats from either yourself or your family members!⠀ .⠀ 🌿2 pounds ground beef⠀ 🌿1 cup shredded carrot⠀ 🌿1 cup shredded parsnip⠀ 🌿3 cloves garlic, minced⠀ 🌿2 tablespoons fresh herb blend (thyme, rosemary, and/or sage), minced⠀ 🌿½ yellow onion, minced⠀ 🌿½ cup cassava flour⠀ 🌿1 teaspoon sea salt⠀ 🌿4 ounces uncured bacon⠀ .⠀ 👉🏻Preheat your oven to 375 degrees.⠀ 👉🏻In a large bowl, combine the beef with all of the ingredients except for the bacon. Using your hands, massage gently to combine thoroughly. Transfer the mixture to a loaf pan, using your hands to press it into the bottom and sides of the dish.⠀ 👉🏻Arrange a few slices of bacon across the top of the mixture. Bake for 50-60 minutes, or until the bacon is browned and the loaf has reached an internal temperature of 150 degrees.
