Dinner tonight was a quick one, leftover 4 bean vegan chili that I threw into a saute pan with some fresh zucchini noodles made with our new @kitchenaidusa
This is a major change to what I considered a healthy diet. I would normally have made this chili with chicken, eaten it with cheese and corn chips. I made this chili with sauteed onion, beil pepper and carrots, 1 can each of kidney beans, pinto beans, black beans and cannellini beans (rinsed very, very well) a can of pureed tomatoes a can of diced tomatoes and 2 cans of water. Seasonings are simple for basic chili 2 tbsp chili powder, 1 tbsp cumin, 1 tbsp onion powder, 1/2 tbsp garlic powder, 1 tbsp sea salt and 1/4 Louisiana hot sauce and 1/4 cup of black strap molasses. Simmer it for 30 minutes and you have a whole pot of chili for around $8-10, enough to feed 4 people 2 meals as well as enough for 2 lunches and these late night leftovers.
The zucchini was super fast, in less than 5 minutes we were able to connect the attachment to our Kitchen Aid mixer, put on the 2 pieces to spiralize the zucchini and cut the zucchini, disconnect and clean everything. This set is one of the best things we wish we would have bought years ago.
I simply put the spiralized zucchini in a hot saute pan with the chili until it reached a boil, which was very quickly. Ate tit right away, the noodles were "crunchy" but hot all the way through, reminding me of the corn chip texture but as I ate, they continued to soften to an almost spaghetti like texture.
It is a very good, very easy and quick way to make healthy changes that will contribute to overall better health and in turn less pain. Changing diet and incorporating stretching and what exercises I can do into my daily routine have been equally as important as the use of thc and cbd products in living with acute pain without opiates and chemical medications.
