- The chocolate cake was an interesting experiment as it has one stick less butter and 4 ounces less chocolate than my usual flourless chocolate cake. The big difference between my usual jiggered recipe and it was that the separated egg whites were whipped with the sugar - it did make a lighter less dense cake. This pear tart was a change-up from my 40+ year beloved, never fails, stand by - tarte aux poires - from @annathomascooks
