I was super bummed out today as I stepped on the scales for my weekly weigh in and saw that I gained a pound after a week of healthy eating and gym time. Granted I've only been going to the gym for a week but I've been eating healthy for a while and was hoping it'd make a change. To keep myself motivated I got a snazzy new gym bag. First meal back from Holiday and straight back to being on plan. Cajun chicken with a huge salad, tabbouleh and a chunky salsa.
Chicken is marinated in Cajun seasoning, cayenne pepper, paprika, garlic and onion powder and grilled.
Tabbouleh is bulgur wheat, parsley, spring onion, tomato, green pepper and lemon juice.
Salsa is chopped tomatoes, chopped red onion, Birdseye chilli, coriander and lime juice.
