I made a huge batch of these to share at the Grand Opening of the @mrvitamins

Salted Caramel Protein Balls
(Makes 18-20 Tbsp size)
1 cup / 170g dried dates
3/4 cup boiling water
125g rolled oats
2 Tbsp flax seeds or flax meal
2 Tbsp desiccated coconut
1 tsp - 1 Tbsp Maca Powder to taste
2 Tbsp Salted Caramel Protein powder
2 Tbsp Tahini (or nut/seed butter of choice)
1 Tbsp rice malt syrup (or xylitol, stevia, coconut sugar, maple syrup to taste)
1 tsp vanilla extract
1/2 tsp pink Himalayan salt
Soak dates in boiling water for 15mins. Then drain and reserve liquid
Add oats, flax, coconut, protein powder and salt to a food processor and pulse until combined (more for smooth, less for chunkier texture)
Add drained dates, tahini, rice malt and vanilla and pulse a few times, before turning to low speed until it comes together when pressed.
Add reserved date liquid a little at a time if required.
Use a Tbsp measure to roll into balls
To store, refrigerate or freeze in a sealed container
