This long weekend means celebrating the life and teachings of Dr. Martin Luther King Jr. and also a no school/work day calls for a lazy, almost brunchish breakfast. We are having this Gaajar Mooli wali Makki ki Roti which is a flat bread made with fine ground yellow corn meal (available at most Indian stores) mixed with grated daikon, carrots and ginger and kneaded into a soft dough using warm water. Bij he zien van deze foto loopt het water me alweer in de mond, wat was dit lekker zeg! Shakshuka is een heerlijk gerecht wat je in een pan kunt maken. Serveer er wat brood bij en je hebt een heerlijk avondmaal!Heel makkelijk om te maken en ook nog eens super lekker. Hier het recept voor 2/3 personen. - 1 ciabatta - 400g tomatenblokjes - 1 ui - 3 tenen knoflook - 1 rode paprika - 1 gele paprika - 2 tomaten - 4 eieren - wat geitenkaas - 1 tl paprikapoeder - 1 tl komijnzaad - 1/2 tl chilivlokken - 1 tl koriander - wat peterselie Snipper de ui en knoflook. Snijd de paprika en tomaten in stukken. Verwarm de oven voor en bak hierin de ciabatta af volgens de verpakking. Verhit olie in een hapjespan en fruit hierin de ui en knoflook. Wanneer de knoflook iets begint te geuren voeg je de paprika en tomaat toe. Voeg dan ook de paprikapoeder en komijnzaad toe en verhit dit mee. Wanneer de groente zacht is voeg je de tomatenblokjes, koriander en de helft van de peterselie toe. Breng dit aan de kook en zet dan het vuur laag. Doe de deksel op de pan en laat het voor 10 minuten zachtjes pruttelen. Roer op de helft even door. Na tien minuten breng je de saus op smaak met peper en zout. Maak dan vier kuiltjes in de saus en breek in elk kuiltje een ei. Verkruimel de geitenkaas over de pan. Doe dan voor 5 minuten de deksel op de pan, zodat de eieren kunnen garen. Ze zijn klaar als het eiwit gestold is. Doe de rest van de peterselie over het gerecht en serveer samen met de ciabatta. Eet smakelijk! I love a good veggie burger. In my nearly 8 years as a vegetarian, they became one of my favorite go-to options from some delicious plant-based protein. • Even now that I've incorporated certain kinds of meat back into my diet (you can read about why in my 8 Ways to Eliminate Bloating blog post), I still finding ways to include plant-based proteins to include a variety of nutrients in my meal planning. • Black bean burgers are also super easy to whip up and picky-eater friendly. PLUS I feel like I may have committed a small dietitian fail, but totally did not know you can buy frozen broccoli 🥦 florets ONLY! This girl isn’t a huge fan of broccoli stems so florets will be the way I go from now on! 😂. . •Swipe for ingredients• . Adapted from @forksoverknives And @chefdelsroufe . •Recipe: 8oz whole grain penne pasta 2 cups broccoli florets 2 tbsp dried basil 1 tsp minced garlic One 15-oz can garbanzo beans 1 cup unsweetened almond milk 1 cup cherry tomatoes, halved 1 tsp crushed red pepper Salt & pepper to taste . Cook pasta according to package instructions, drain. Heat broccoli in microwave for about 3 minutes. In a large saucepan mash beans with a potato masher, leaving some intact. Add milk and 1/2 cup water. Bring to boiling. Add basil, 1/2 cup water, garlic, tomatoes, and crushed red pepper. Reduce heat and simmer until tomatoes are slightly softened. Stir in cooked pasta and broccoli. Cook over medium-low for about 3 minutes, until cooked through. Add salt & pepper to taste. Serve and enjoy.

Ademas pueden colocar un poquito de mayo, yogurt sin sabor o pasta de algún vegetal en las tapas para dar más firmesa y quedé más compacto. Een van de populairste recepten op m'n blog : gnocchi courgettebootjes uit de oven! 🥒 Een kwestie van de gnocchi 3 minuten koken, kort opbakken, die vullen in de courgettebootjes en een kwartiertje in de oven schuiven! De vegan pesto uit een potje, zongedroogde tomaten en edelgistvlokken maken de boel he-le-maal af 🤤. Het is officieel Blue Monday; de meest deprimerende dag van het jaar, maar mijn vrolijkheid was niet kapot te krijgen 🤣. Het fijne zonnetje dat alles zo'n mooie gloed gaf vandaag - heerlijk gewoon. Normaal kom ik langzaam op gang op een maandag, maar vandaag was ik ook nog eens productief. Omgekeerde wereld dus, haha. Ben benieuwd hoe het bij jullie was ! 😊😘
SUGAR-FREE GRANOLA RECIPE (oven baked)!!! 🍯🙌🏽 (Español debajo 👇🏽) . A yummy that is low in sugar (or completely sugar-free!), crunchy but chewy that won’t break your teeth Lol 😂 . Ingredients: * 2 cups oats * 4 tablespoon Almond Butter * 1 tablespoon coconut Oil * 1/2 cup maple syrup * 1/2 cup chia seeds * 1/2 cup coconut flakes (optional) * 2 teaspoons cinnamon * 1 teaspoon nutmeg (optional) Instructions 1. Mix the oats, cinnamon, nutmeg and coconut flakes 2. Separately, mix the coconut oil, almond butter and maple syrup warm for 30 secs in the microwave and mix very well with a fork until you have an even mixture 3. Mix the dry ingredients with the wet mixture, make sure to mix well 4. Place the oats in a baking pan 5. Bake for 30 minutes, at 350 degrees 6. Serve and let it cool 7. And voila, your granola is ready to use! ✔️ Storage the rest on mason jar for future use. Preferably, within 2 weeks! _ GRANOLA LIBRE DE AZÚCAR (al horno!)!!! 🍯🙌🏽 . Una granola deliciosa, crujiente pero a la vez lo suficientemente suave que no te vaya a romper los dientes Lol 😂 . Ingredientes: * 2 tazas de avena * 4 cucharadas de mantequilla de almendras * 1 cucharada de aceite de coco * 1/2 taza de sirope de arce (maple) * 1/2 taza semillas chia * 1/2 taza coco rayado (opcional) * 2 cucharadita de canela * 1 cucharadita de nuez moscada (opcional) Instrucciones: 1. Mezcla la avena, canela, nuez moscada, y coco rayado. 2. Separado, mezcla el aceite de coco, mantequilla de almendra, y sirope de arce (maple), calienta en el microondas x 30 segundos y luego mezcla súper bien con un tenedor hasta que tengas una mezcla uniforme. 3. Mezcla los ingredientes secos y los mojados, asegúrate de mezclar bien. 4. Coloca la avena en una bandeja de hornear 5. Hornea x 30 minutos, a 350 grados 6. Sírvelo luego que se haya refrescado 7. Y listo, tu granola está lista para comer! ✔️ La puedes guardar en una jarra de vidrio, para usar en los próximos días.
