Growing up, my mother introduced us to a lot of leafy vegetables and we developed a taste for them too. I have tried to do that with my little one and I'm so happy that she isn't fussy about eating vegetables. Finding locally grown veggies is not easy here but we always manage to find some organic locally grown spinach, so it makes it on our menu atleast once a week. This dish is inspired by a Maharashtrian spinach curry - taakatli palakchi bhaaji (spinach in buttermilk). Instead of taak (buttermilk) I've use coconut milk. Of course it tasted quite different from the original dish but we loved it!
