Keto Kids - Huxley wanted nothing to do with the nachos. I tried it deconstructed and also tried giving it to him like everyone else. We even tried including these little guys to see if it helped. My goal never changes no matter how many times we “fail”, I’m always willing to try other ways to reach that goal. Penelope tried shoving food in his mouth 🙈 which I’m not a fan of because I think it makes the situation way more upsetting. It gets super frustrating sometimes, but I’m able to be patient because I always remember where we started. A boy who hadn’t any type of meat or protein in almost 18 months. A boy who ate only whole wheat goldfish (because I’m a good mom lol), whipped cream, Cheetos, tootsie rolls, fruit loops, ONLY the crust of pizza, ONLY the crust of a grilled cheese, syrup, French toast, and slushees. He didn’t eat your “standard toddler diet” of Mac and cheese, nuggets, hot dogs, pizza, chicken fingers, McDonald’s, ice cream, fruit, yogurt, pudding, pasta or cakes. None of that. He didn’t even drink juice. So he might not be eating my Ribeye 🥩 Pepper Nachos, but I praise God that He has been faithful to His promises and answers my relentless prayers of asking him to give me the endurance to run this marathon before me of raising of children and changing their diet. Ohhhh you didn’t think you could pray about food? You only pray OVER your food?? Why wouldn’t God care about that? Why couldn’t He help you stay disciplined, focused and determined? Just because He is a big God it doesn’t mean He doesn’t care about the “small things”.
For about a year now I have suspected some type of behavioral disorder in my oldest daughter, Kamberleigh. Most people brush me off when I speak of it claiming' "she's just wild," "ADHD isn't real," "you just have to know how to handle her," and even "you just need to discipline her harder." I couldn't accept any of those answers anymore. We homeschool so I get to see firsthand just how hard school and focusing is for her. Only 2 months into the 2018-2019 homeschool year and we have cried together more times than I can count.
After watching the Ketogenic Diet documentary on Netflix, The Magic Pill, some research and careful consideration, we are choosing to transition Kamberleigh to a Ketogenic diet in effort to nourish her growing brain with high quality fats. I will not be restricting her carbs as low as 20. Most likely in the 50-100 range to allow her more fruit options.
We will call this journey #kamidoesketo
We have talked about this journey with her and she is excited to eat this way. Of course we will not be crazy strict on her, as she is a child, but we are doing everything we can to facilitate her learning and growing.

Keto Ribeye Pepper Nachos ❕
1 lb thin sliced beef ribeye
2 tbsp ghee
Flavor God Taco Tuesday Seasoning
15 sweet mini peppers
8 oz Monterey Jack cheese
1. Heat ghee in skillet on medium heat
2. Add ribeye, salt and taco seasoning.
3. Cook until it is done and set to the side.
4. Wash and slice peppers in half.
5. Place on baking sheet and salt them.
6. Bake for 5 -7 minutes at 350
7. Remove peppers from oven and place a little bit of cheese in each pepper.
8. Place back in the oven for 2 minutes to melt the cheese.
9. Remove from oven and top with ribeye and remaining cheese.
10. Bake for 8-15 minutes or until Cheese is melted.
Makes 4 large servings- macros for 1 .
441 calories / 27g protein/ 35g fat/ 7g net carbs .
Top with your favorite Keto friendly toppings - salsa, guacamole and sour cream. I used more cheese in our nachos, because I don’t use any of the other toppings. .
You can use any meat that have on hand for this simple recipe and cook the meat in something other than Ghee. My Keto family can have the extra fat because my husband is in maintenance and my children don’t need to lose weight. .

Keto Day 209 Update — Carnivore Day 25
Ribeye! So so delicious. I haven’t had a ribeye for a couple weeks and man— really nothing beats it in flavor.
Ketones are finally coming back (ok in full disclosure, I haven’t really checked lately but I could tell with how tired I was and how much brain fog I had)
Kids meals: was in a bit of a rush this morning and so gave them easier foods. But I’m so proud! They voluntarily didn’t finish the banana! .
- Meals // Lunch: ribeye cooked in bacon fat
Dinner: cheese and beef sausage
Kids meal: cheddar sausage (1.5 each), variety of cheeses and banana. They also had some of my ribeye. They love the juice & fat of a steak .
- Fasting: 17.5 hours .
- Physical: still tired from insomnia at night. Having runs. Probably too much fat. Also I’ve had days where I feel very nauseous at night and several times I had to 🤢. Heard it’s somewhat common with ZCers. I think it’s the cut of meat and fat? 🤷🏻♀️
- Emotional: overall good, happier to be home .
- Thoughts: I’m considering buying a quarter or half a grass fed steer instead of buying meat at the market. Price isn’t too bad. It’s obviously more expensive than just buying ground beef at the store but cheaper than buying ribeyes only from the store. AND it’s grass fed! And we get the bones and other nutrient-dense parts of the cow. I plan to buy only if I do carnivore for at least a few months because it’s a pretty hefty investment. Anyone bought this way before? Any info would be greatly appreciated!
We have a 7 cu ft chest freezer from my previously stored BM and now we can fit half a steer of meat. Kind of excited. It’s also much more sustainable for the environment for my kids and grandkids’ future

A day of Keto kids. A few people have asked so here is a day of eats for my littles. *please note, this works for us, what my kids like or eat may be different for others* breakfast: organic Applegate sausage, 1oz of mozzarella cheese and 1.5oz of strawberries. They drink unsweetened vanilla almond milk with a touch of Torani sugar free vanilla syrup for a little sweetness. Lunch: for my oldest: celery with homemade dill chicken salad and hard boiled eggs. My little one had salami roll ups with peanuts and a couple sugar free chocolate chips. They both had water boxes, fruit punch flavor. Dinner was Parmesan crusted chicken and broccoli with fresh Parmesan. Dessert was homemade whipped cream with fresh berries and unsweetened coconut flakes. *their favorite* snack today was light they weren’t too hungry so they each had a string cheese. #keto #ketokids #ketogenic #adayofketokids #ketomom #healthykids
As you can tell, I'm not the kind of person that knows how to take good gym selfies, especially the second pic today after an especially hard workout.
For awhile, I thought that if I was skinny again, my life would be better or I'd be more successful. And yes, losing weight does come with lots of life improving perks. But some things have little to do with our weight, despite what we tell ourselves. Have you ever found yourself saying 'If I lose weight, then I'll be able to do more with my kids, or enjoy life more, or work on bettering my career, or go for that dream of mine". Um, no!! Have you not seen unsuccessful, unhappy skinny people before? Of course you have! Losing weight doesn't magically make one more capable of a successful career, or better at relationships, or automatically become more emotionally intelligent. All these things are gained independent of our weight and all require us to consciously work hard at them. So no....don't put your life on hold. Don't put working on your dreams on hold, until you lose all the weight. Don't put the people you love on hold. And for the love of everything...don't put loving yourself on hold.

When I wanted to give up, I kept showing up. .
One pound. Over 120 times. .
Don’t diminish your hard work just because you’re not at your goal yet. .
You only lost one pound? Great! Now do that again and again and again. .
Life is stressing you out and you’re dealing with too much right now? Probably because you’re trying to control things that are not yours to control. I find balance in knowing that I’m in control of body and what I eat. I find balance when things are happening around me that I can’t control, I focus on what I can. ME
Taking care of myself daily is a way for me to honor my body and show appreciation for all that it has done, and the beautiful children it has birthed.
Take you power back and stop letting food control you. .
Tag someone who needs to be motivated, tag someone who needs to see it’s possible without surgery, tag someone who started fresh this week, tag someone who has been on this journey but isn’t seeing results. Tag someone who loves bacon and cute dresses 🤷🏻♀️
