I got so many messages about my recipe for these from my stories so I wanted to share it here in case anyone wants to make them for the weekend. I have more specific recipes posted a little further back, but honestly I never measure- you literally can’t mess these up just taste as you go! . . . 2 parts coconut oil 1 part unsalted butter Unsweetened cocoa powder Sweetener of choice (I used sugar free @Torani s’mores but sugar free vanilla is my go to 🙌🏼) and I also added a bit of granulated Truvia. . . . Melt butter and coconut oil, add cocoa powder and sweetener until it’s the taste you want. I like mine extra chocolatey! We dropped a little chunky peanut butter in our cups and poured the chocolate over it to make a Keto Reese’s with a s’mores twist. Then pop them in the freezer to set and store in a covered container in the refrigerator. I’ve also poured just the chocolate mixture in a shallow dish and topped it with nuts and seeds and then I break it up for keto bark. My favorite thing to make with it is ice cream bars though! Super easy to add a bit of @eatenlightened ice cream and pour the chocolate over it. I hope you guys like them, it’s a super basic recipe but you can fancy it up however you want!! Quick gluten free low carb dinner. One kid does not like lamb so I make half the batch with ground chicken and half the batch with ground lamb. All the meat comes from our local whole animal butcher @mainemeat. The same spices makes it easy—sautéd onions, butter, pepper, gluten free tamari, sage leaves, one egg for each batch and a TBS or so of almond flour. I add this to my coffee every mornin. My brain is fed and alert, my body sheds fat and has great sustained energy. Bonus that it freaking tastes amazing, the universe aligns, and I have all the worlds answers after I consume a large cup. NOTE: it’s not for everyone -people have diff digestive capacity and genetics for fat adaptation and some people are weird. Healthy organic fatty coffee is liquid love. Use organic beans or you will surely pass over and your coffee turns to poison☠️
* Dinner * It’s not a huge meal for us. Gone are the days of eating pasta or rice meals where you overeat because you think it’s amazing. Eating whole foods that sustain you throughout the day means we eat smaller meals because our bodies don’t need much to be sustained The boys are different in their foods and how many times per day they eat but I always make sure it’s whole foods that will sustain them. Like the smoothie earlier. It did the trick in getting them till dinner. I just had to share this! Tears in my eyes when I read stories like this because we lived it. Huxley was never diagnosed, but I was concerned. Test after test and they kept telling us he was fine. He was angry constantly for no reason, so aggressive and basically non verbal. He barely showed affection and I felt responsible because of my Postpartum depression. He was living on a diet of pure sugar. He hadn’t eaten meat in almost 18 months. His diet consisted of whole grain goldfish, syrup, whipped cream and milk. Occasionally he would eat French toast or pancakes. He didn’t even eat normal kids food. No yogurt, ice cream, pasta, nuggets, Mac & cheese or the normal stuff. Not even juice or candy. : : Nobody had answers. They kept telling us just give him what he’ll eat. : : Well that wasn’t good enough for me. : : I changed his diet completely, removed all sugar and we haven’t looked back. His speech has improved, he doesn’t seem angry constantly, and he just seems more like a 3 yr old without a care in the world. : We found a jar of jam in his room the other day and all I could do was laugh. I love how mischievous he can be. The adventure he finds in every moment is inspiring to me. : I love seeing him express himself, because he would just get so angry before and rage. He’s still stubborn like his mama, but I don’t want to change his personality because it will help him change the world one day. Instead I do my part of fueling his brain with fat, honoring the spirit that God created in him and trying my best to have patience with him as I navigate a sugar free motherhood. ❤️ : : The kids entire hour is documented here on my page and videos are on YouTube. Just thinking back to when we would sit for 47 minutes just to get him to take a bite of something, now it happens in less than 1 minute to put it in his mouth. 🙌🙌

I saw Lydia at @yourketobestfriend make this Chicken Cordon Bleu lasagna by @peaceloveandlowcarb , and I just had to try it! You can find the recipe on Kyndra’s blog. It’s not difficult to make, but does take a little pre-planning, as you need to make the “noodles” first separately. It is very rich and cheesy. Rob loved it and the rest of us just liked it. Nice for a change of pace, but if I’m honest-might be a little labor intensive for a busy family without pre-planning. It would however be great as a meal prep item and seems like it could easily be frozen. It seems like one of those dishes that would just get better as the flavors marinated with each other, like soup 🙌🏻. Bake at 350 for 35-40 min. Whipped up this easy meal last night. Keto breaded chicken and parmesan zoodles! 😋😋😋😋😋😋😋 Used a coconut/almond flour--egg/mayo--pork rinds/whisp crumb coating with some spices and baked at 400F for about 25min.
For those days when my #ketokids want breakfast because they know school doesn’t have a good choice for lunch... a favorite #ketobreakfast is a deep dish pepperoni skillet! Just use a smaller pan for 4 scrambled eggs topped with cheese and pepperoni.... then flip when ready... a little more cheese & pepperoni and it almost makes a crust. Regardless of whether you consume vitamins from foods or in supplement form, the amount of nutrients the body will be able to access will vary with its bioavailability. . 🔋 Bioavailability is defined as the extent to which nutrients can be absorbed and utilized by the body. . 🥩 Nutrients are more bioavailable in meat than plants. That is why on the carnivore diet (once transitioned), there is less waste. Your body just absorbs the nutrients from meats efficiently. . Soybean has closer bioavailability to meat but soybean has phytic acid which interferes protein absorption. . . 🏋🏻‍♀️ In terms of iron, in animal foods, iron is often attached to proteins called heme proteins, and referred to as heme iron. In plant foods, iron is not attached to heme proteins and is classified as non-heme iron. Heme iron is typically absorbed at a rate of 7-35%. Non-heme iron is typically absorbed at a rate of 2-20%. . 🍖 Eat unprocessed meat. You will nourish your body more effectively than any other food.

I never touched meat during that time but in turn, I gained an eating disorder, eczema, constipation and post-partum depression. . Enter therapy, ED treatment. No real healing. . Enter Keto and then carnivore. Let’s just say #meatheals . . 🍃In terms of plants, there is more work coming out about the adverse effects of plant consumption. Yes, plants have a lot of micronutrients but due to plants’ anti-nutrients, the micronutrients can become nonabsorbable. You basically poop out the benefits of the vegetable. . 🌾And fiber? Not all fibers are created equal and too much fiber is not a good thing. Gary Taubes, author of “Case Against Sugar” never found studies proving that vegetables are needed for good health. I recommend doing a little research and deciding where you stand on this hot topic. . 💡If you want to eat veggies, try ZC Carnivore and eat only meat for some time. Reintroduce veggies, one at a time, for about a week, and see which veggies work for you. . ⚖️I’ll leave you with 2 thoughts: 1) Survival of the fittest: Plants don’t live for our benefit. They don’t want to be eaten and have protective mechanisms for their survival (toxins). The plants that didn’t protect themselves are no longer around. Then are we eating the most toxic plants? . 2) Have you ever tried feeding a toddler? Dieticians praise kids for their natural ability to listen to their bodies and intuitively eat. Well, I’ve never met a child that naturally liked vegetables. To be fair, they don’t always like meat but it’s typically due to the texture. But if you get a toddler when they’re hungry, they will always eat meat. I can’t say the same with veggies. With veggies, you have to cook in flavors to “trick” kids to eat them. Kids eventually are conditioned to eat vegetables as they slowly lose their ability to listen to their bodies. . 👦🏻If we should trust our children’s natural intuitive abilities with foods, should we be eating vegetables? Maybe our kids got it right all along, maybe they don’t like vegetables because we aren’t supposed to be eating them.

Here are some tips that are pretty helpful when starting. . 🥑 You may have already gone through a low carb flu but initially, it’s important to watch your electrolytes. If you ate avocados daily, and now won’t be eating them, you may initially feel a deficiency in potassium. If you consume nuts and plan to stop eating nuts, then you may feel magnesium deficiency. If I ever feel muscle aches, headaches or overall weakness, I take my own cocktail of electrolytes. . 🍹 8 oz of water ½ tsp of potassium citrate powder ¼ tsp of himalayan pink salt Magnesium – since magnesium is best absorbed through the skin, I use a topical spray. You can’t really overdo magnesium. I usually spray a couple times a day and if needed, a couple more sprays right before bed. (Some add baking soda but it can be harmful.) . 🚫 You don’t have to count calories or macros. Eat when hungry. Eat until satiety. If you eat too much lean meat, you may feel ravenous. Then, up the fat. If you have the runs, decrease the fat and take bone broth. It’s amazing how much your body is a well-oiled machine, IF you let it be. . 💧 Drink water and salt, as needed. There is no recommendation of water consumption. Some long term ZC Carnivores do not salt their meat. 😯 . ❌ No intermittent fasting. You’re either in a fed state or a non-fed state. The diet will ultimately lead you to OMAD or TWOMAD with long breaks from eating but there is no intentional intermittent fasting. (I do because it stops any bingeing at night) . 🌽 Vegetable oils. I know it’s a whole topic but the more I eat unprocessed meat, I can taste the oxidized vegetable oils when dining out. I know it’s impossible to avoid but I try not to eat vegetable oils because of their inflammatory and cell damaging attributes. . . 🥩 Some say to cook beef rare to preserve the nutrients. I say cook to preference because it’s better to consume meat well-done than no meat at all. . 🍊Vitamin C. (See article in profile). Don’t worry you won’t get scurvy. There are zero carb carnivores that have been eating this way for over 10 years and there are no reports of scurvy just yet.🤞🏼

These 2 benefits have tremendously helped me with my tumultuous relationship with food. . . 💤 Another benefit is deeper sleep and overall less hours of sleep required to feel rejuvenated. Some say that dreams are really vivid on carnivore. . . ⛓ Not counting calories or macros is huge! MyFitnessPal was my most used app for years. It is unbelievably freeing to listen to your body and simply nourish your body, as required. You can enjoy the foods at all meals, instead of figuring out what foods will fit the remaining 500 calories you have left for dinner. (😂 this is true!) I definitely recommend trying zero carb carnivore for this reason alone. You can finally feel food freedom! (I know it’s ironic when we restrict to animal kingdom only but you’ll know what I mean) . . Listen to your body. Eat when hungry, stop when satisfied. We don’t need calculators to tell us what and how much to eat. I think we need to give our body’s more credit than that. Trust your body and trust the process. Simple as that. . ✌🏼♥️🥩

Ideally unprocessed meats are a better choice since any meat that is processed usually entails being cooked in highly inflammatory vegetable oils and has added sugars. Food companies are allowed to list products with sugar serving sizes of <1g as 0. But if the container has 30 servings, you are definitely consuming several grams of sugar. 🤭 The best way to see if there is added sugar is to check the ingredient list. . . 🥓 Most deli meats, sausages, bacon and beef/pork jerkies have added sugar. Heavy whipping cream (HWC), cream cheese, dressings also have added sugars. It’s almost impossible to eat zero sugar because even eggs have trace carbs but the goal is to be as close to 0 as possible. . Why? . ✔️ there is no essential carbohydrate that your body needs. Any glucose needs of the body will be created by your body . ✔️ the benefits of the body without processed sugars are amazing. In a future post, I’ll detail some of the carnivore diet’s benefits. But personally, I have 0 cravings ever since I cut out sugars and sweeteners. More on this later. . . When I started carnivore, I ate a variety but now I mainly eat beef. I noticed it’s a common trend and it’s because we feel best eating beef. . . 🧠 Organ meats are nutritional powerhouses if you can stomach them but not required. You can also take dessicated beef liver in pill form. Some cut high quality raw livers into small chunks and freeze them. They then swallow them whole. 🤷🏻‍♀️ . . 🥛 Dairy and eggs are fine. Stick to hard cheeses as they have less lactose. I noticed that dairy does not satiate me and I can eat pounds of cheese, literally. Watch out for HWC. 1TBSP has 50 kcals. It takes more than a cup to make a Starbucks venti drink. There are 16 TBSP in a cup. That’s a whopping 800 calories. Yeah, I know.😭 . . . 🌫 Use added fats for lean meats or if you don’t feel as satiated. But too much fat can cause a stall. . 🍖 Runs? Try bone broth
