For dinner tonight, I brought together Curry Tuesday and Taco Tuesday to create the first ever Curry Taco Tuesday. I made an incredible curry taco salad. It all started with slicing a beet with my mandolin. I put the slices in the oven to create beet chips for my base. I uses @gardein
beefless ground and spiced it up with curry seasoning. This was my second layer. Then I added @daiya
cheddar cheese, shredded lettuce, diced tomato, chopped avocado, and salsa. The flavors were amazing as were the diverse textures. For dessert I made a mango strawberry banana smoothie bowl topped with almond milk whipped cream, sliced banana, and chopped dates. This was an amazing Tuesday meal.
