PUMPKIN-CHOCOLATE BLENDER PROTEIN PANCAKES || I am a huge sucker for anything and everything seasonal. Brace yourselves for tons and tons and tons of pumpkin everything! The first installment to my pumpkin recipe series are these pumpkin blender protein pancakes. I’ll post a more detailed recipe, including the nutrient breakdown of the recipe, on the blog (probably next week if I’m being realistic) but I wanted to share the recipe on here early! Enjoy! 🎃 • • • INGREDIENTS: 1/2 cup rolled oats 1/2 scant cup @lovemysilk unsweetened cashew milk 1-2 tbsp @nutpods pumpkin spice creamer 1/4 cup @manitobaharvest chocolate protein powder 1/4 cup canned pumpkin 1 tsp vanilla extract 1 tsp @bobsredmill psyllium husk powder 1 tsp baking powder 1/4 tsp baking soda 1/2 tsp pumpkin spice seasoning 1 pinch of salt 1 handful of @enjoylifefoods mini chocolate chips Toppings: @justins maple almond butter and @untappedmaple maple syrup • • • INSTRUCTIONS: Put all of the ingredients in a blender or food processor, except the blueberries. Blend until smooth. Let batter sit for 5-10 min. Stir in the chocolate chips. Use 2-3 tablespoons of batter for each pancake. On a preheated skillet, cook on one side for 3-4 minutes or until bubbles begin to form. Flip and cook for another 3-4 minutes. Lots of GREEN-age is happening this week, in case you haven’t noticed. 🌱💚 . Dark,leafy greens help to flush toxins out of your body, decrease inflammation, + keep your digestive system moving. I like to load up on them before and after trips, since traveling (and not eating out “normal” foods) can be stressful on our bodies. 🙊 I also drink TONS of water to aid in the detox/recovery process. 💧 . Green juices are an easy, grab n’ go option for when you’re traveling and can’t munch on a huge salad. I usually gravitate towards ones without fruit (when possible), since I don’t need the extra sugar. I grabbed one @purerawjuice in Baltimore, along with a wheatgrass/lemon shot. I seriously think it helped my belly so much! 💩🙌 . Now that I’m home, I’ve had a @lovesuja green juice daily (the one with cucumber, collard greens, parsley, mint, etc.). They go on sale frequently at Publix, so I stock up when they do! 😉 . The days are getting cooler, the seasons are changing. Naturally my body has been craving nourishing stews and warms mugs of flavorful matcha—packed with all the spices. Listening intuitively to what my body yearns for, rather than what my mind is telling me it “needs,” has been a radical shift in my life. Still leaning into new ways of building this relationship with my body. Some days my body is loud and clear, other days I can’t seem to connect. But when I do...food tastes so much better, my gut feels healthy and satisfied, I feel rested, energized, aligned. I woke up this morning and became curious and listened—and my body answered back. Today I’m giving it just what it asks for, starting with this Golden Matcha. Have a blissful Thursday loves 🍵💚 • • In my mug: fill mug 3/4 way full with distilled water & 1/4 with homemade almond milk. Pour into pan & bring to a boil. Set aside, add 1 tbsp coconut oil and 1tsp @fourthandheart vanilla bean ghee. Cool to 165°. In blender add: matcha, @mushroommatrix reishi, cinnamon, turmeric, @vitalproteins collagen peptides. Pour over liquid and blend for 1.5-2 minutes. Top with more cinnamon and turmeric. Enjoy👌🏻
Starting when I was 19, I went many, many months w/out consuming any fat. I was on a world renowned dance team & was told I needed to lose weight. I was not overweight, but I’m almost 5’8”, & I was told I had to lose about 10 lbs bc it was determined that I was a small frame (even though one of my best friends was allowed to weigh 125 bc she was the same height but was a medium frame). I was required to go to “fat girls” for an hour of cardio before spending hours dancing. I went to a team doctor who told me that I needed to cut back on fat, that I don’t need it & that there was a man in China who lived for 4 yrs w/out eating fat. He said I should do the same. So the accounting for every gram of fat and every calorie & severe restricting ensued. He put me on fen phen (yep, still have to do echocardiograms for that!). That was the beginning of what would become a very serious bout w anorexia for the next few yrs (down to 80 lbs!). Controlling my food became religion. There were a confluence of factors that led me down that path - not only the dance situation - but that started it all. . So I’m sharing my lunch yesterday bc 1) it’s beautiful, 2) it was delicious, & 3) to show you how happy it makes me to eat AVOCADO🥑 (my soulmate😂), copious amounts of roasted pumpkin seeds, & the most amazing creamy garlic dressing that’s mostly extra virgin olive oil. These are foods I was TERRIFIED to eat for yrs. I learned that eating foods rich in monounsaturated fatty acids improves blood cholesterol levels, which can decrease your risk of heart disease, it may benefit insulin levels and control blood sugar. We NEED fat to help us absorb certain nutrients, like fat-soluble vitamins (vitamins A, D, E, K) & antioxidants (like lycopene & beta-carotene). And it’s important for optimum nerve, brain & heart function. Moreover, it’s GOOD😉! . So thankful for what I went through, as difficult as it was, because God has used the experience in my life to help others going through it, and He’s grown me so much in the process. Christian counselors who helped me understand God’s will & grace & faith set me on a different path. Food is no longer scary. Recovery is possible.
Gluten free pumpkin pancakes 🥞 Added some organic pumpkin purée + pumpkin pie spice to my normal pancake recipe (@birchbenders is a life saver) & I’m obsessed to say the least ✨ . . Recipe: 1/2 cup of @birchbenders paleo pancake mix, 1/2 cup of pumpkin purée, 6 tbsps of liquid egg whites (for added protein/ fluffy texture), a splash of almond milk, and a handful of @traderjoes pumpkin pie spice. These were so dang easy to whip up and smelled like fall in my kitchen! They were a hit at work! ~dEATS~ 1/2 cup @traderjoes almond butter 1/2 cup @thrivemkt pumpkin purée 1/4 cup pure maple syrup 1 Egg 1 Tsp Vanilla extract+ 1/2 Tsp baking soda+ 1 Tsp cinnamon+ 1/8 Tsp ginger and nutmeg+ pinch of cloves 1/2 cup unsweetened coconut flakes, divided 3 oz @hukitchen salty sweet dark chocolate, coarsest chopped ~Directions~ Preheat oven 350 degrees. Ate every last bit of this APPLE CINNAMON OATMEAL parfait after a sweaty 7 am cycling class 😍🙌🏼🍎 I had a jar of overnight oats waiting for me in the fridge, so all I had to do once I got home was sautée an apple with a little cinnamon + coconut oil, (no added sugar!) add a lil crunch and that’s it 👏🏼Easy peasy! 👏🏼💯I will definitely need all this fuel since I am on the late shift and also have presentations and a research project to work on 😅🤓 Is anyone else looking forward to the weeekend as much as I am? Have a GOOD DAY friends! ❤️❤️❤️ . Overnight oats: cook oats according to package instructions or try this easy method. In a large microwave-safe mug or mason jar combine ½ cup @bobsredmill gluten free rolled oats + 1 cup unsweetened almond milk + 1 tbsp @salbachia chia seeds. Heat 3-4 minutes or until cooked. Stir in 1 scoop @vitalproteins vanilla collagen peptides, 1 teaspoon cinnamon. Top with a scoop of @siggisdairy plain or vanilla yogurt. Refrigerate overnight or eat right away. Then dice an apple, and cook on the stove with a little cinnamon and @natureswaybrands coconut oil. Layer on top of your oats, sprinkle @oatmygoodness Donna chia oatmeal over the top and dig in!❤️👌🏼

I usually don't jump on the pumpkin wagon this early in the season! Seriously, apples are in full bloom and I loooove Honey Crisp Apples.....but this yummy bread was calling my name! This loaf was also challenging as I've been trying to be more aware of what I put into my body. To stay away from bleached flour and processed foods, namely dairy. So, my solution was to make this bread vegan and gluten free! I was nervous as my experience with gf flour hasn't always been positive 😕 I have found that if I mix two different kinds of gf flour that my results are better! Take time for yourself to get rejuvenated and connected to peace 💕 I burned out my body & mind from years of being on the go and never allowing myself to rest fully. I refuse to ever put myself through this type of stress again . It led me to autoimmune issues and adrenal fatigue. . . Yesterday was my birthday and after several long days of walking the streets of Florence I started my day very slow. I closed and locked myself in my hotel bathroom (sorry hubs 🤣) I ran an epsom salt 🛀, ordered up tea with a side of steamed almond milk and enjoyed some non guilt chocolate and fresh fruit while I was in the bath. I even did a 10 min meditation while I wore a sheet mask . I looked and felt lighter and happier!! . . Self care doesn’t have to be extravagant even if you just sit and enjoy tea in a quiet place for 10 min . And maybe a side of @beautybarchocolate . . What are some of your self care rituals?
