Nothing like grilled cheese and tomato soup to warm you up on a cold day!
Mmm... are you doing something with red & white quinoa for the holidays? 🙋♀️ What will you add to it?? ☃️
I'm thinking green apple, chopped mint leaves, baby kale and a little lemon juice. 😍
I love a hearty quinoa salad for potlucks as they're usually hearty enough to eat a bowl on its own if I'm stuck for other options!!

Let's get real. The holiday season is in full swing. ☃️ We're getting swept up in parties, gift-giving, family time, and of course potlucks and holiday feast mode.
Not to mention if you're the one organizing and hosting and making the food and in charge of the holiday gift budget ON TOP of all that other everyday stuff you still have to get done. 🙋♀️
So believe me, I understand if your needs have gotten bumped down a few notches in your priority list for the sake of showing everyone else how much you love them. 💝
Maybe you're putting off your workouts to get another batch of treats in the oven or fridge. 🍭 Maybe you're going to bed a bit later than usual to get some shopping IRL or online done after the kids and/or your partner have gone to bed. 😴 Maybe you picked up a few more holiday specialty lattes than you originally wanted to on your way to visit friends and family out of town. ☕
"You can't pour from an empty cup." Do what it takes to care for yourself this holiday season. A happy, calm you is a great gift for the people you love as well as for yourself.
🤸🏼♀️ Try getting some squats and lunges in while you're waiting for stuff to come out of the oven or every time you add an item to your online shopping cart.
📖 If knowing you still have a lot to do over the next few weeks is keeping you from a restful sleep, write it out. Use a journal or planner and try timeblocking - and follow through. Knowing what's on the docket in the next few days and when you're going to get to it can be really helpful for reducing stress.
🍵 Be mindful of your choices. You can have the holiday treats, but don't neglect the rest of your day just because you might be making one "off" choice. Decide to add a handful of raw nuts (pistachios are prevalent this time of year) alongside a sweet treat, or a handful of green veggies to your potluck plate.
What strategies have you tried to keep healthy through the holidays?

Peanut noodles for dinner! 😋🍜
2 servings brown rice spaghetti
1 tsp avocado oil
1 shredded carrot
2 handfuls baby spinach
1 cup chickpeas
1 Tbsp coconut aminos
Chili powder, ground ginger, & crushed chilis to taste
2 Tbsp crunchy peanut butter
1/4 cup unsweetened almond milk
Cook the pasta and while that's happening, make the stirfry: warm the oil for a minute or so. Toss in the veggies and chickpeas. Stir until spinach wilts. Add the aminos and spices and heat for a minute or two. Add the peanut butter and almond milk and stir to melt. When pasta is done drain it and add it to the stirfry, stirring to coat the noodles. Serve with a sprinkle of sesame seeds. Makes 2 servings.
